The third ‘sun’ that makes the Lavaux vineyard terraces so distinctive is nothing other than their walls.

As well their primary function of countering the slope, retaining the soil so the terraces can be farmed, the walls store the sun’s heat during the day and release it as the temperature falls during the evening and at night. The grapes benefit from this additional warmth, ripening more easily – and that makes for full, balanced wines.
